A heart is removed from the pericardium and the arteries and veins trimmed from the base of the heart. Hearts to remain whole, except to make weight of pack. Hearts with knife scores can be packed. The auricles can remain attached.

Standard weight 27.2kg.

The kidney is prepared by the removal of blood vessels and ureter at their point of entry to the kidney. The kidney is removed from its capsule with all fats removed.


Liver (7030)

The liver is prepared with the hepatic lymph node in situ where possible. Any fat, blood vessels and connective tissue attached to the liver is removed. Livers may be cut to make weight. Livers to be packed in tubes - [960mm x 135mm x 200um]. Tubes to be approximately 760mm when filled. 6 tubes per carton catchweight cartons.

Sweetbreads (7060)

A sweetbread (thymus gland) is derived from young animals and is pale and lobulated. It lies along the neck and on each side of the trachea. The sweetbread is trimmed of as much fat as possible and all connective tissue.

Whole tripe, small keyhole incision. Well scalded - not to be bleached only light coloured tripes to be included. Any darker tripe to be excluded.
